Why the Shape Matters More Than the Number A narrow, deep bowl exposes less broth to the air than a wide shallow one, so soup holds its heat noticeably longer. The steep sides also mean you can lift noodles from the bottom and stir without sending broth over the rim, and the footed base lifts the whole thing off the table so heat does not transfer straight through to the wood.
